How to Make Fantastic Fish Burritos


A burrito is basically a warm tortilla, which is wrapped around a filling. Traditional Mexican burritos are not very big and they are likely to contain a combination of refried beans, one or two meats, and Mexican style rice.

There are lots of burrito variations and you can use ingredients like seafood, chicken, turkey, black beans, sweet potato, or pork to add flavor to your burritos. Guacamole, salsa, chili sauce, or sour cream is also nice with them.

Much of Mexico is surrounded by water, making shellfish and fish staples in some regions of the country. There are various authentic Mexican food recipes, which you can make with fish, including burritos, tacos, Mexican casseroles, layered salads and much more. Switch the chicken, pork or beef for fish if you want a fish dinner but you also want the flavor of Mexico.

Bear in mind that fish tends to cook quite fast, whichever cooking method you are using for it, so it is a good idea to have the tortillas toasted and the other ingredients ready before you start cooking your halibut.

Recipe for Halibut Burritos

The following recipe combines grilled halibut, beans, onion, tomatoes, avocado, cheese and more to make hearty, delicious burritos. There are lots of ways to cook halibut but grilling it means you can keep a close eye on it and also if you are using a charcoal grill it will take on a pleasant smoky aroma and flavor.

What you will need:


1/3 cup unsalted butter plus 1/3 cup olive oil or 2/3 cup lard
2 cups mashed, cooked white beans
1 diced onion
1 cup salsa verde
1/2 bunch chopped fresh thyme leaves
2 minced cloves garlic
2 cored, peeled, de-seeded and diced Roma tomatoes
2 cored, sliced big tomatoes
1 halved, peeled, de-seeded, sliced avocado
3/4 lb halibut or similar firm white fish fillets
2 tablespoons lime juice
4 big toasted tortillas
Leaves of 1/2 lettuce
2 tablespoons olive oil, plus more as needed
1/4 lb crumbled feta cheese
Salt and black pepper, to taste

Preparation:

Add the fat to a pan and heat it over a moderately hot flame. Saute the onion for six minutes, and then add the garlic as well as half a teaspoon of black pepper and one teaspoon of salt. Turn the heat down to moderately low and cook it for a couple of minutes.

Stir in the beans and cook the mixture until the liquid has evaporated. Stir in the thyme and tomatoes. Preheat the grill to moderately high and coat the grate with oil. Grill the halibut for four minutes per side or until it is firm. Cut it into half inch chunks.

Divide the bean mixture between the tortillas, then the halibut chunks. Add some salsa. Stir the remaining ingredients together and season to taste. Top the fish with this mixture, then fold the tortillas up at the bottom and roll them up to make cylinder shapes. Serve these halibut burritos seam-side down.
