Delicious Fish and Seafood Tacos


This recipe is an example of a well-balanced meal with a little fat, a good protein source (fish, shrimp and cheese), fiber (beans, vegetables), good carbs (lettuce, tomato, vegetables) with an abundance of vitamins and minerals. And even a novice in the kitchen can follow the 6 easy steps.

You can use any type of pepper: sweet peppers, pablano, or something hotter like jalapeño and the hottest the habanero. Remember when you remove the seeds and cut hot peppers to wear gloves, or wash your hands thoroughly.

Shopping/to do list - serves 4:

2 teaspoons olive oil

1 pound white fish of choice, cut into bite size pieces

1/2 pound shrimp, peeled

1 Tablespoon Mexican or Taco seasoning

1 cup pepper mix, chopped

1/2 cup onion, sliced thin

1 cut tomato, diced

1 cup black beans, washed and drained

4 tacos and 4 tortillas

1 cup cheddar cheese, grated

2 cups lettuce, shredded

Preparation:

1 - Heat oil in skillet. Season fish pieces with Mexican seasoning.

2 - Add fish to the skillet. Stir around for ± 2 minutes. Pre-heat the oven to 375°F.

3 - Add peppers and onion. Stir around for ± 1 minute.

4 - Add tomato and black beans. Stir around for 1 minute.

5 - Place tacos and tortilla on a cookie sheet and place in the oven for 10 minutes.

6 - Stuff tacos and tortilla with 1/4 of the mixer, cheese and lettuce.

Serve family style, which means place food on some colorful platters and sit around the table together, chatting about the daily things, being grateful for the gathering and the great food.

Smoky Jalapeno Rub Recipes for Taco Salad, Venison, Baby Back Ribs & Burgers


Smoky Jalapeño Rub is great on any of these - Steak, Ribs, Roasts, Chops, Prime Ribs, Fish, Poultry, Burgers, Wild Game and Fowl

Apply Rub generously on both sides of meat, either rub into meat or allow to marinate and the moisture in the meat will draw it in. grill, fry, bake or smoke to desired doneness. Tip: If possible season meat and allow time to marinate, first wrap with plastic wrap or put in re-sealable Plastic bag 2-4 hrs or overnight

Smoky Jalapeño Grilled Vegetables

Slice vegetables like peppers, onions, mushrooms, zucchini etc. brush or spray with olive oil. Sprinkle Smoky Jalapeño Rub & Smoky Mesquite Salt over all. Let marinate 15 minutes. Grill until done.

Smoky J Scramble

Stir together 4 eggs, 1 Tbsp Smoky Jalapeño Rub, 2 Tablespoons each: Bell Pepper, Onion, chopped pickled jalapeño slices,2 Sliced fresh mushrooms, 1/2 cup shredded cheese, 1/2 tsp Smoky Mesquite Salt, Heat skillet with 1 tablespoon Butter, Scramble mixture till done.

Smoky Ham

Rub down a Ham with our Smoky Jalapeño or any of our Just Simply Good Stuff! Rubs for that matter. and a little Smoky Mesquite Salt then Smoke or Bake. No need for additional seasoning it's already in there!

Taco Salad

1 can black beans 15oz rinsed and drained

1 can refried beans 15oz heated

2-3 cps Cooked Meat chicken, beef or pork, shredded or ground

4 cp shredded lettuce

1 lg tomato; chopped

1 1/2 cps shredded Cheddar or Monterey jack cheese

1/4 c whole pitted black olives

1/4 c green onion chopped

1/2 red onion separated into rings

1 lime quartered

1 avocado peeled and sliced

1/2 c dairy sour cream

1 can chopped mild green chilies 4oz drained

10-15 pickled jalapeños slices more if you like hot

2 cloves garlic; minced

1 Tbsp Smoky Jalapeño Rub

2 Tbsp Beyond the Border

2 tsp Lemon Lime salt

1 bag tortilla chips yellow corn

Directions

In small bowl mix Smoky Jalapeño Rub, Lemon Lime salt and Beyond the Border seasoning, set aside. Reserve small amount of tomato, jalapeño, olives and cheese for garnish. In a 3-4 quart clear glass bowl, layer black beans, refried beans, jalapeños, lettuce, minced garlic, tomato, cheese, avocado slices, onions, mild green chilies, olives, sprinkle small amount of Smoky Jalapeño Rub, Lemon Lime Salt and Beyond the Border seasoning on every other layer as you go, put spoonfuls of sour cream in a ring around top edge of salad, making smaller rings as you work inward sprinkle tomato, cheese, olives and jalapeño on top for garnish. Cover the surface with plastic wrap and chill for 1-2 hours. Serve over tortilla chips with Lime wedges. Salad will mix as you serve it.

Easy Venison Roast

2 - 4 lbs. Venison Roast

3 med. Red or White Potatoes

1 Onion

2 Cloves Crushed Garlic

3 Carrots

2 Tbsp Flour

2 Beef bouillon Cubes

Smoky Jalapeño Rub

Smoky Mesquite Salt

2 - 3 Cups Water

1 Lg. Reynolds Cook n Bag

Directions

Sprinkle Smoky Jalapeño Rub on all sides and ends of roast. Lightly sprinkle with Smoky Mesquite Salt, remember it's a salt. Put 2 Tbsp flour into Cook n' Bag, add roast close top and shake to distribute flour over roast, set aside. Wash and cut potatoes, onion and carrots into ¼'s add to bag, add garlic crushed & chopped, pour 2cups water, careful not to wash off all of your seasoning on roast, add bouillon cubes Close bag with tie provided. Cut slits in bag about 2"- 3" below tie closure, place bag in 9" x 11" baking pan. Bake @ 375 degrees until desired doneness. Remove from oven. Remove bag from pan when cool enough hold at top of bag. Hold over sauce pan, poke 1 hole in bottom of bag, let juice drain into pan. Put bag back in pan and back into oven w/heat off to keep warm. Place pan on stove bring to medium boil meanwhile mix 2-3 Tbsp. Flour or corn starch into 1/2 cup cold water stir till smooth. Stir gravy rapidly while slowly adding flour/water mixture cook to desired thickness. Slice Roast put on platter surround w/ potatoes, carrots and onions serve gravy on the side. ENJOY!

Corn on the Cob

Butter corn, sprinkle with Smoky Jalapeño Rub & Smoky Mesquite salt. Wrap in foil, grill or bake.

This recipe is especially handy when you're feeding a crowd. Just unwrap the corn and you're good to go!

Traditional Mexican Recipes and How to Make Them


Mexican food in Mexico often bears very little resemblance to the Mexican food recipes that you might find in the United States. Mexico is so huge that there are lots of regional differences and what a Mexican family might eat for dinner in Veracruz might be completely different to a typical Mexican meal served in the Yucatan.

In the Puebla area, traditional Mexican recipes include mole sauce, which is a thick, spicy and herbal sauce containing chocolate, which is poured over turkey or chicken. Recipe for Chiles en Nogada

This delicious recipe is often served on Mexican Independence Day and it consists of stuffed green chilies in a walnut sauce. The green of the chilies, white of the sauce and red of the pomegranate seeds used to garnish the dish are the Mexican flag colors. Use mild chili peppers or even bell peppers if you really do not like spicy food.

What you will need:


1/4 chopped onion
6 big, fresh green chili peppers
3 garlic cloves
1/2 teaspoon sugar
3/4 cup sour cream
1 tablespoon vegetable oil or lard
2 tablespoons chopped unsalted almonds
1/2 cup finely chopped walnuts
1/4 teaspoon cinnamon
Seeds from a pomegranate
Chopped bunch of fresh parsley
3 eggs
2 tablespoons raisins, soaked for 20 minutes in warm water
1/4 teaspoon cumin
1/8 teaspoon nutmeg
1/2 lb ground beef or ground pork
1 chopped, peeled, cored apple
1/4 cup evaporated milk
Salt and black pepper, to taste
How to make it:

Roast the green chilies, and then remove the seeds and skin. Warm the lard or oil in a pot over a moderate heat, then brown the meat. Add the apple, cinnamon, onion, almonds, garlic, nutmeg, cinnamon, salt, pepper and cumin and cook for five minutes.

Beat the egg whites until they form stiff peaks, then fold in the yolks and a little salt. Dip the chilies in this egg mixture, and then saute them until they are tender and golden brown. Stuff each chili with the stuffing mixture. Combine the sugar, walnuts and sour cream and pour this over the hot chilies. Sprinkle the pomegranate seeds over the walnut sauce and serve hot.

Making Cod Recipes the Easy Way


Making cod recipes can be confusing as there are so many types to choose from. These recipes should help you learn how to prepare cod while serving up a tasty meal.

Salted Cod Cakes

Ingredients

2 potatoes (large, cubed and peeled)

1/2 cup of chopped fresh parsley

1 teaspoon of any seafood seasoning

1 pound of salted cod fish

2 beaten eggs

1 chopped onion

¼ cup of olive oil

½ cup of all-purpose flour

Instructions

Put the fish in a bowl and put cold water over it. Store it in the fridge for 8 hours. Replace the water every two hours. After 8 hours, rinse the cod in cold water. Chop into 1 inch pieces. Put the fish and potatoes in a pot.

When making cod recipes like this, you've got to pour water over the fish and potatoes. Boil at high heat then reduce it to medium-low. Cover and allow it to simmer for 20 minutes. Let it cool for 10 minutes.

Put the fish and potatoes in a bowl. Add the pepper, fish seasoning and parsley. Mix it with a potato masher. Stir in the onions and eggs. Shape them into balls and flatten a bit. Heat the oil in a skillet over medium high heat.

Keep cooking until the cakes turn brown. This will take about 3 minutes each side. After making cod recipe, drain it on a plate with paper towels.

Cod Pretzel

Ingredients

4 (4 ounce) of cod fillets

1/3 cup of light salad dressing

1 teaspoon of salt

2 tablespoons of cooking oil

4 ounces of pretzels

1 teaspoon of seasoned salt

2/3 cup of apricot low sugar preserves 4 teaspoons of half-and-half

1 tablespoon of Dijon mustard

2 tablespoons of minced parsley

Instructions

Mix the salad dressing and salt in a bowl. Chop the pretzels into small pieces. Put the pretzels in a dish. Put the salad dressing on the cod's sides. Top it off with the pretzels. Heat a couple of tablespoons of oil in a frying pan.

To continue making cod recipe, sauté the cod for 4 minutes each side. The cod should be kept warm. Get another bowl. Mix the half and half and Dijon mustard at medium high heat. Whisk the apricot. Keep cooking until the mixture gets thick. Serve the sauce with the fish. Add the parsley as you serve it.

Avocado Fish Tacos

Ingredients

2 avocados, pitted and peeled

1/4 cup flour

¼ cup of oil

Salt and pepper

1/3 cup of poppy seed dressing

1 lb of fish chopped into 2" slices

2 tablespoons lime juice

Corn tortillas

2 cups of cabbage

Instructions

Cut the avocados in small chunks. Spray it with lime juice. Toss the cabbage and poppy seed dressing in a bowl. Mix flour, salt and pepper in a bowl. Put the fish chunks in it. Cook the fish chunks until they're brown. Put the cabbage in tortillas and top with fish and avocado.

Boost Your Fish Intake With Versatile Pollock


Fish is found in cuisines in every corner of the world, especially in coastal communities. It is transported to restaurants across the country so that everyone can enjoy its health benefits and tasty textures. Yet even when they enjoy eating fish while dining out, people sometimes avoid preparing it at home. Alaska pollock comes in a variety of forms and cuts that are widely available at supermarkets, so that you can easily prepare it for your family.

One easy option is to bake the fillets. Prepare a glass pan by greasing the bottom with a bit of butter or drizzle a bit of olive oil on it. Then, lay out the pieces of Alaska pollock. In a separate bowl, mix sour cream and parmesan cheese in about equal proportions. Add a bit of melted butter as well as salt, black pepper, and red pepper flakes. Another way to bake fillets is on a baking sheet. Drizzle it with olive oil and then place the Alaska pollock on top, seasoning the fillets with paprika and pepper. Then, add sliced onions, bell peppers, tomatoes, and any other of your favorite veggies. Bake for about thirty minutes. Just before they are done, add slices of cheddar or American cheese to top off the delicious meal idea.

Alaska pollock is also found in fish stick form in the frozen foods section of a grocery store. Keeping a box in the freezer is a great way to guarantee you always have a meal idea up your sleeve. Kids love fish sticks baked in the oven and served with ketchup, but you can also serve them with veggies or use them to create Mexican tacos. The preparation of the fish sticks is the same, so you can satisfy all tastes at the dinner table.

To make tacos, prepare shredded lettuce, cubed tomato, guacamole, salsa, grated cheese, and any other ingredients you enjoy in tacos. Then, place 2 fish sticks in each tortilla as well as a bit of everything else. Alternatively, you can put the ingredients on the table and have everyone make their own. Pairing Fish And Fruits


Fish and fruit are two of the healthiest food groups you can choose from but many people do not think of pairing the two to create an array of interesting and tasty dishes. Fruits are naturally sweet, tangy, and juicy and lend texture, flavor, and interest to all types of seafood salads.

Although you should use your favorite types of fish, white fish is always a good choice as it is mild and does not have that "fishy" taste that many are not fond of. Grilled white fish tastes wonderful with a mixture of mangos, peaches, and honey and grilling the fish helps to lock in the flavor and create a delicious crust. Alternatively, you can also create a fruit salsa to serve along with several different types of fish including salmon steaks.

What You Need

4 tablespoons white wine vinegar
4 tablespoons oil
2 tablespoons sugar
1/4 teaspoon salt
1/8 teaspoon dry mustard
Dash white pepper
1 teaspoon lemon juice
6 ounce can white tuna, drained
1/2 cup celery, sliced
2 tablespoons sliced green onion
1 cup cantaloupe melon, cut into cubes
1 cup honeydew melon, cut into cubes
1 cup red grapes
1 cup Granny Smith apple, chopped
1 head lettuce

How to Make It

In a small mixing bowl, combine the white wine vinegar, olive oil, sugar, salt, dry mustard, white pepper, and lemon juice and stir to mix well.

In a medium sized mixing bowl combine the rest of the ingredients and then toss with the prepared dressing.

Cover and chill the salad mixture for 1 hour.

Place leaves of lettuce on 4 plates and top each with the fruity tuna salad and serve immediately.

Serves 4.

How to Make Fantastic Fish Burritos


A burrito is basically a warm tortilla, which is wrapped around a filling. Traditional Mexican burritos are not very big and they are likely to contain a combination of refried beans, one or two meats, and Mexican style rice.

There are lots of burrito variations and you can use ingredients like seafood, chicken, turkey, black beans, sweet potato, or pork to add flavor to your burritos. Guacamole, salsa, chili sauce, or sour cream is also nice with them.

The following recipe combines grilled halibut, beans, onion, tomatoes, avocado, cheese and more to make hearty, delicious burritos. What you will need:


1/3 cup unsalted butter plus 1/3 cup olive oil or 2/3 cup lard
2 cups mashed, cooked white beans
1 diced onion
1 cup salsa verde
1/2 bunch chopped fresh thyme leaves
2 minced cloves garlic
2 cored, peeled, de-seeded and diced Roma tomatoes
2 cored, sliced big tomatoes
1 halved, peeled, de-seeded, sliced avocado
3/4 lb halibut or similar firm white fish fillets
2 tablespoons lime juice
4 big toasted tortillas
Leaves of 1/2 lettuce
2 tablespoons olive oil, plus more as needed
1/4 lb crumbled feta cheese
Salt and black pepper, to taste

Preparation:

Add the fat to a pan and heat it over a moderately hot flame. Saute the onion for six minutes, and then add the garlic as well as half a teaspoon of black pepper and one teaspoon of salt. Turn the heat down to moderately low and cook it for a couple of minutes.

Stir in the beans and cook the mixture until the liquid has evaporated. Stir in the thyme and tomatoes. Preheat the grill to moderately high and coat the grate with oil. Grill the halibut for four minutes per side or until it is firm. Cut it into half inch chunks.

Divide the bean mixture between the tortillas, then the halibut chunks. Add some salsa. Stir the remaining ingredients together and season to taste. Top the fish with this mixture, then fold the tortillas up at the bottom and roll them up to make cylinder shapes. Serve these halibut burritos seam-side down.

Mexican Tacos


Probably the most common and most famous among Mexican dishes is the Taco.  Usually eaten using bare hands, tacos are tortillas filled with meat, vegetables, salsa and cheese. Although served early on by the Aztecs, it was only named afterward by the Spanish. Taco actually means "light snack". Mexican women found it more practical to prepare and serve for husbands and guests. The traditional taco has evolved through time to its modern day form.  It continuously and consistently gained popularity that it has become the most-loved Mexican food of all time.

Tacos can either be soft-shelled or hard-shelled. Both types have fillings, of course. Soft shells are flexible and moldable ones, not crunchy at all. The freshness is retained even during travel yet it can become soggy because of the salsa filling. It can be eaten with hands with less spillage, as long as it is not overfilled.  A hard-shelled taco on the other hand, is one that has that crunchy u-shaped tortilla famous in the United States.  The shell may break easily so best to eat it immediately after preparation.

For the fish lovers, there is Tacos de Pescado or Fish Tacos. They say that this originates from Baja California in Mexico. The corn or flour tortilla is topped with grilled or fried fish, some lettuce or cabbage, pico de gallo and some sour cream or citrus/mayonnaise sauce. Optional toppings can be black beans, jalapeño peppers, diced tomatoes, carrot strips and some green onions. This recipe will need:


1/2 cup tequila
1/2 cup fresh lime juice
1/2 cup water
2 tablespoons kosher salt
2 tablespoons turbinado sugar
1 tablespoon chili powder
2 pounds cod fillet, cut into 3- by 1-inch strips
1/2 cup mayonnaise
1/2 cup sour cream
1 tablespoon chili powder
1 teaspoon cider vinegar
1/2 teaspoon kosher salt
1 teaspoon sugar
1 (12 ounce) package coleslaw mix
1 tablespoon chopped green onions
1 cup all-purpose flour
1 tablespoon chili powder
1 tablespoon baking soda
2 teaspoons kosher salt
1 cup oil for deep frying
9 corn or flour tortillas
Prepare the marinade by whisking together in a bowl the tequila, lime juice, water, 2 tablespoons salt, turbinado sugar, and one tablespoon sugar. Set aside around 1/4 cup of the marinade. Marinate the cod in the remaining mixture in the bowl. Cover the bowl and set aside. In a large bowl, mix together the mayonnaise, sour cream, 1 tablespoon chili powder, cider vinegar, half a teaspoon of salt, sugar and green onions. Add the coleslaw mix and set this mixture aside. Mix the flour, 1 tablespoon chili powder, baking soda, and 2 teaspoons salt in a shallow dish. Shake off the marinade from the cod fish and coat in the flour mixture. Deep-fry the coated cod in the oil which should be pre-heated to 375 degrees. Cook until the fish is browned on all sides. Heat the reserved marinade in a saucepan. Assemble the tacos by placing fish in the center of the tortilla, topping with coleslaw (and any other desired toppings), drizzling with the warm marinade and folding the tortilla to close.

Easy Steps to Make Fabulous Rubio's Fish Tacos


Rubio's fish tacos are famous - and rightly so.

They taste fantastic - hot crunchy fish, cool sauce, spicy salsa and crispy salad all in a tortilla wrap.

The combination of textures, temperatures and flavors mingle together to give a superb eating experience.

The recipe is straight forward, but a little time consuming as it's best to make your batter an hour in advance and leave it to stand.

It uses a lot of bowls as well - but if you consider you can save yourself dollars by making this at home, it's well worth it.

You need 2 fillets of fish cut into sticks - about a pound (500g) in total.

Rinse them in cold water with a squirt of lemon juice and dry them on paper towel - dip into seasoned flour prior to battering as it helps the batter to stick.

The beer - use a dark beer, guinness, stout or similar - you only use 1 cup so you can exercise cook's privileges and drink the rest!

For the salad - the authentic Rubio's is shredded cabbage - I would add some grated carrot, shredded iceberg lettuce and maybe some finely sliced onion to that for a bit more interest.

The recipe makes 12 tortillas - you could halve these quantities if you liked or invite a friend or two depending on how hungry you are.

Rubio's Fish Taco Recipe

12 sticks of fish - prepared as above

12 corn tortillas

oil for deep frying

Batter

1 cup flour

1 cup beer

1 teaspoon garlic powder

few twists pepper

Sauce

1/2 cup mayonnaise

1/2 cup plain yoghurt

Salsa

1 garlic clove - peeled and finely chopped

6 ripe tomatoes - diced finely

Small red onion - peeled and diced

2 tablespoon cilantro leaves - chopped finely

2 jalapeno chillies - seeded and chopped finely

1 1/2 teaspoon salt

1/4 teaspoon pepper

Salad

Finely shredded hard cabbage

limes - cut into wedges - you'll need 12 pieces

First make your batter - whisk the ingredients together until they're well blended and then beat a little longer to make the batter full of air bubbles 'airy'. Set aside for an hour.

Mix the sauce ingredients together and put into the fridge.

Mix the salsa ingredients together - if you can't get cilantro leaves, use fresh chopped parsley, coriander, chives or similar to your taste - I used shredded basil leaves.

Have everything ready to assemble before you cook the fish.

Before you start cooking, give the batter another whisk - this will make it airy again - vital for crispy batter.

Heat the oil in a pan - when a cube of bread floats to the top, it's ready.

Dip each piece of fish into seasoned plain flour, then into the batter and fry until the batter is golden and crispy.

Cook the fish in one layer or it might 'steam' and the batter may go soggy.

Heat the tortillas in a lightly oiled pan until they are soft and hot.

Assemble as follows:-

Lay the tortilla on a plate and layer the fish, sauce, salsa and cabbage - squeeze the lime juice over it all and then fold the tortilla over the filling.

If you follow the instructions in order, the recipe will flow and you will not waste too much time hanging around waiting for the hour to pass - you could of course open another beer!

Taco Recipes - My Two Favorite Recipes With Seasoning and Guacamole


There are a lot of taco recipes available online, ranging from traditional Mexican tacos to tex-mex style tacos and even chocolate tacos. Only your imagination limits how many variations of taco fillings you can make, this is why tacos are so fun to cook and have become so popular around the world. Whether you're already a taco lover or just want to try something new, I think you will love these taco recipes.

Ground beef taco recipe

Ingredients:

- 1 pound ground meat

- 1 small onion or ½ medium sized onion

- ½ bell pepper

- 2 garlic cloves

- 1 tablespoon of chilli powder

- 1 teaspoon of cumin

- 1 tablespoon of paprika

- ½ teaspoon of salt

Put the ground beef in a pan with good quality extra virgin cooking oil. When the ground beef starts getting browned, add onion, bell pepper and garlic cloves. Add the chilli powder, cumin, paprika, salt and a bit of water and let it simmer for a while until all the water has cooked away.

Serve with minced lettuce, tomato, cheddar cheese, guacamole and salsa.

Fish taco recipe

Seasoning:

- 1 tablespoon of chili powder

- 1/4 teaspoon of garlic powder

- 1/4 teaspoon of onion powder

- 1/4 teaspoon dried oregano

- 1/2 teaspoon paprika

- 2 teaspoons ground cumin

- 1 teaspoon sea salt

- 1 teaspoon black pepper

Fish:

- 1 pound firm white fish

- 2 tablespoons of good quality extra virgin cooking oil

- 2 tablespoons of lime juice

Combine fish, oil, lime juice and one half of the seasoning mix in a plastic bag and marinate it in the refridgerator for about 30 minutes. Fry or grill the fish until it flakes easily

Fish taco sauce:

- 1/2 cup sour cream

- 1/2 cup mayonnaise

- 1/4 cup chopped fresh cilantro

- Half taco seasoning (see above)

Mix sour cream, mayonnaise, cilantro and one half of the seasoning mix.

Fill tortillas with fish, cabbage, chopped tomato, chopped avocado, cheddar cheese, lime juice and top it with fish sauce. You could also serve with a homemade salsa.

Guacamole recipe

- 2 ripe avocadoes

- 2 cloves of garlic

- Juice from 2 limes

- 1 tablespoon fresh cilantro

- 1 teaspoon of sea salt

- 1/2 teaspoon of pepper

- chili to taste

- 1 minced tomato

Mash all the ingredients except the minced tomato which you blend into the guacamole when you are done mashing it.

Beyond Fish: Delicious Dishes Using Crab Meat


The Alaska Dungeness Crab makes its home in the clean, cold waters off the coast of Alaska, where it lives in the seaweed, eating happily and growing to a respectably large size. With the sweet flavor of the meat, there's no need to bury the taco in sauces or cheese, as the succulent crab taste should always remain front and center.

Here's another recipe for bringing out the southwest flavor in a delicious crab dinner. Depending on how many you are serving, you will want to start out with at least a couple of pounds of cooked and cleaned Alaska Dungeness Crab meat. Start by sautéing two diced onions and four cloves of garlic. For those who like spice, throwing in a single jalepeno pepper, with butter, is a nice idea, too. Once the onions become transparent, you can add your crab meat. Cook this all for about 10 minutes.

Next, add one bunch of chopped cilantro, two tablespoons of ground cumin, and the juice from two limes. Thoroughly mix this all together, and let the meat soak in the flavors of the herbs and spices. Then, remove from heat and cover. Once cooled, spoon over toasted tortillas and top with your favorite salsa. It's a whole new take on tacos that will leave guests practically salivating.

4 whole dressed trout, 8 oz each

Preheat the oven to 350 degrees F. Score the trout down to the bone, down one side, then season it with salt and black pepper. Warm the sesame seeds in the butter in a pan until the butter has melted completely.

Put each fish on a 12 inch square sheet of parchment paper and pour the melted butter and sesame seeds on top. Arrange the slices of lime on the trout, and then fold the parchment paper up so you have 4 sealed packages.

Tuck the ends under the fish. Put the packages on a baking sheet and bake for 18 minutes. Open the parchment paper packages at the table so the aroma and juices are released.

What's for Dinner? Egg, Poblano and Flank Steak Tacos!


I realized recently that I don't eat very much meat anymore, at least not yet. I'm sure as the Spring and Summer BBQing seasons come on I will be eating more. Anyway, like I was saying, most of my posts have been either fish or vegetarian friendly so I decided to give you one of my healthy red meat meals that I'm very fond of.

I use poblanos but if you do not do spicy foods you may want to get another pepper with not as much heat. If you get good poblanos they might set your mouth ablaze. Just thinking of these yummy stuffed tacos is making me super hungry!

Scrambled Egg and Poblano Pepper Tacos w/ Sliced Flank Steak

Ingredients

1 lb flank steak

1 pound poblano chiles (3 large or 4 medium)

1 tablespoon extra virgin olive oil

6 large eggs

1 Tbsp water

Salt and pepper to taste

8 corn tortillas

1 to 2 ounces shredded Mexican cheese (optional)

Preparation

Rub the steak with oil and season with salt and pepper. You can either broil or grill the flank steak. To broil, place flank steak on a broiling pan 2 to 3 inches from the heat source. Broil 4 minutes on each side for medium rare, 5-6 minutes on each side for medium. Avoid overcooking, because it makes flank steak become tough. To grill, place flank steak directly over the heat source and cook, uncovered, over medium heat for 6-8 minutes on each side. Slice across the grain into thin strips.

Roast the chiles. Light a gas burner, and place the peppers directly over the flame. As soon as one section has blackened, turn, using tongs, to expose another section to the flame. Continue to turn until the peppers are blackened all over. (you could do the same by broiling in your oven) Place in a bowl, and cover tightly. Allow to sit until cool, then remove the charred skin. Cut the pepper in half, remove the seeds and membranes, and cut in thin strips. Cut the strips into 1-inch lengths.

Heat the tortillas in a medium saute pan, about 1 min on each side. Wrap in a kitchen towel to keep warm.

Whisk the eggs in a bowl, then whisk in the water and add salt to taste. Heat a heavy, nonstick skillet over medium heat and spray with cooking spray. Stir in the eggs. Stir until the eggs just begin to form curds, and add the chiles. Continue to stir over medium heat until the eggs have set, which shouldn't take more than five minutes. Remove from the heat. Taste and adjust salt.

Pass the hot tortillas, and top each one with a generous spoonful of the egg and poblano mixture. Top off with a couple slices of flank steak and sprinkle on a little shredded cheese if desired, fold the tortillas over the filling and enjoy!
